The Christine B. Foundation is ‘cooking up’ new ways for patients with cancer and their families to access nutritional meals, through the nutritional assistance program.
The CBF Recipe Committee is pleased to announce that each month recipes will be built using the specific items offered in each grocery package. Cancer survivors, chefs, dietitians, and community members make up this committee, each taking a careful look at how you can prepare meals in your kitchen with CBF’s support.
The June Recipe of the Month is: Summer Chicken/Meatloaf Burger.

Summertime Chicken/Meatloaf Burger
Serves – 6
Preparation Time: 10 Minutes
Cook Time: 60 Minutes
Vegetable Oil – .5 Ounces
Onion – .25 Cup
Celery – .25 Cup
Ground Chicken – 16 Ounces
White Bread – 2 Slices
Eggs- 2 Medium Eggs
Milk – 4 Ounces
Salt – 1 Teaspoon
Pepper – 1Teaspoon
Garlic Powder – 1 Teaspoon
Worcestershire Sauce – 2 Teaspoon
Tomato Ketchup – .5 Cup
1 – Finely dice the onion and celery. Heat the oil in a saute pan on medium high.
2 – Saute onion and celery until translucent. Let cool.
3 – In large bowl, soak bread in the milk. Reserve 1/2 of the ketchup.
4 – Add all other ingredients into the bowl and mix well.
5 – Put mixture in an 8 x 4 loaf pan and smooth out. Cover the top of the meatloaf with the reserved ketchup.
6 – Bake at 350 degrees for 50 minutes or until it reaches 165 degrees. Let set for 10 minutes.
